Epic Tomato Sandwich

EPIC TOMATO SANDWICH

I figure life is complicated enough, so a super simple but epically good tomato sandwich is one of life’s pleasures we should all have in our repertoire. Over the years I have continuously tweaked things until I came up with this epic tomato sandwich that is my go-to. The tomato sauce is also epic on burgers.

EPIC TOMATO SANDWICH

INGREDIENTS

  • 6 brioche buns, sliced in half
  • 1 cup shredded iceberg lettuce
  • 2 large tomatoes, sliced
  • salt (choose your favourite) and freshly ground black pepper
  • Epic Mayo
  • 2 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon tomato ketchup
  • 2 teaspoons American mustard
  • 1/8 teaspoon (generous pinch) sweet smoked paprika

In a small bowl whisk together all Epic Mayo ingredients until well combined. Set aside.

Parmesan Cracker

120g (approximately) parmesan, grated

Spread 2 tablespoons parmesan on a small plate and spread evenly in a circle shape. Cook in microwave for 1 minute 30 seconds. Using a palette knife or fish slice, lift melted parmesan onto a clean surface. Repeat process with remaining parmesan. Set aside until cooled and crispy.

Build Your Sandwich

All ingredients laid out ready for creating 6 epic tomato sandwiches with slider buns

Generously spread both sides of buns with Epic Mayo. Lay shredded lettuce on the bottom bun layer. Top with sliced tomato then sprinkle with salt and pepper. Lay a parmesan cracker over the tomato and top with remaining bun layer.
